D.O.M Benedictine is a herbal liqueur beverage which is commonly consumed or used as an cooking ingredients by Asian woman who is on confinement during the 1st month of labor. But even on normal days this herbal liqueur can also act as a beneficial health beverage for members in the family too. In this post I am sharing two quick dishes using D.O.M which might come in handy for those who has a bottle of two idling at home.

Between don't worry about the "strong" liquor taste of D.O.M because after cooking most of the alcohol content will be evaporated leaving it with a mild "sweet" taste and fragrance gravy that is great for rice or just on it's own.


STIR-FRY GINGER CHICKEN WITH D.O.M



(Serves: 2 | Preparation: 5 minutes | Cooking: 15 minutes)

Ingredients:
  • 1/2 Portion of Chicken, cut into bite-size
  • 6 - 8 Slices Of Ginger, julienne
  • 1 - 2 Tablespoons of Sesame Oil
  • 1/2 - 3/4 Cups D.O.M Benedictine (法国廊酒)
  • 1/2 Teaspoon Dark Soy Sauce
  • 1/2 - 1 Teaspoon of Light Soy Sauce
  • Some Wolfberries And Coriander

Method:-
1. Lightly marinate the chicken pieces with:- 1 Teaspoon Fresh Ginger Juice; 1/2 Teaspoon Dark Soy Sauce; 1/2 Teaspoon Light Soy Sauce; 1 Teaspoon Sesame Oil; 1/2 Tablespoon Cooking Wine for at least 15 minutes to an hour in the fridge.

2. Preheat frying pan with sesame oil and saute shredded ginger till fragrant and slightly golden in colour.

3. Add in marinated chicken and stir-fry till slight brown, add in D.O.M, light and dark soy sauce and simmer on low heat (cover) for another 5 minutes or more until chicken is cooked through.

4. Turn off the heat, stir-in wolfberries and extra drizzle of sesame oil (optional). Ladle on plate, top with coriander and served immediately with steamed white rice or mee suah (面线).



MEE SUAH WITH PORK LIVER AND D.O.M


Another quick dish using D.O.M Benedictine (法国廊酒) which is nourishing for you to consume anytime. This is good especially after woman's monthly menses to nourish their body too. There is two way that you can consumed this dish either by having it directly on blanched mee suah or a soup version like what a did below.


(Serves: 2 | Preparation: 10 minutes | Cooking: 20 minutes)

Ingredients:
  • 150g Fresh Pork Liver, cut into slices
  • 100g Minced Pork, optional
  • 1 Egg
  • 6 Slices Of Ginger, julienne
  • 1 - 2 Tablespoons of Sesame Oil
  • 1/2 - 3/4 Cups D.O.M Benedictine (法国廊酒)
  • 1 Teaspoon Dark Soy Sauce
  • 1/2 Teaspoon of Light Soy Sauce
  • Extra Ginger Slice and Garlic Cloves
  • 250ml Chicken Broth
  • 750ml Hot Water
  • 2 - 3 bundles Mee Suah (面线)
  • Some chopped spring onion and coriander


Method:-
1. How to prepare pork liver:- Rinse the pork liver (whole piece), pat dry then marinate it with 1 tablespoon of corn flour in a big plastic bag for at least 5 minutes. Rinse and cut it into thin slices, set aside.

2. Marinate minced pork with light soy sauce, corn flour, sesame oil, cooking wine and pepper. Set aside while preparing the rest of the ingredients.

3. Prepare the soup broth by heating up the saucepan with drizzle of oil and saute ginger and garlic till fragrant, add in minced pork and give it a quick stir to break out the lumps.

4. Next pour in chicken broth and hot water, simmer for 5 minutes. Rinse mee suah with water then add it into the soup broth to cook for 30 seconds or till soften (don/t  over cooked), remove and place in bowl(s).

5. With the soup still on simmer, crack in egg and give it a swirl to break out the yolk. When mixture comes to boil, off the heat and ladle soup to mee suah.

6. Preheat frying pan with sesame oil, saute shredded ginger till fragrant, add in pork liver and fry till almost cooked through (less than 3 minutes).

7. Add in D.O.M, light and dark soy sauce. Give it a quick toss and remove from heat.

8 . Ladle pork liver with gravy onto the mee suah, top with chopped onion, coriander and cut chilli. Serve immediately.
